Cucumber & prawn salad

Smoky prawns with crunchy cucumber in a tangy salty dressing.

Ingredients
  

  • 1 cucumber, cut into strips and pat dry
  • 100 g prawn
  • Juice from half a lime
  • ½ cup granulated sugar
  • ¼ cup fish sauce
  • Roasted peanuts
  • Cilantro

Instructions
 

  • Pour fish sauce and sugar in a saucepan and cook on the stove at low heat until the sugar dissolves. This is more than what you need for this, no worries, just store the remaining in the jar in the fridge so you won't have to make again next time.
  • Prepare the prawn: wash and pat dry, wrap them in aluminium foil and place on stove top, cook for 5 minutes, turning twice. When you start to sense a smoky smell, you know it’s done.
  • In a mixing bowl, mix cucumber, red chillies and prawn together with lime juice and 2 teaspoons of the dressing. You can adjust the amount of dressing and lime juice to taste.
  • Garnish with peanut and chopped coriander and you’re good to go!
